The Blue Pearl is more than a restaurant. It’s a „Royal Underwater Experience.“ In the former „Schwalbennest“ on the Spree River, a world spanning over 900 square meters is being created that touches all the senses. As Sous Chef, you’ll work in an environment characterized by golden ceiling waves, illuminated coral floors, and immersive lighting systems.

The kitchen itself is a place of innovation, equipped with state-of-the-art technology to create dishes that set new standards both visually and in terms of taste. Our standards are high: We combine Michelin-starred fine dining with theatrical presentation. You don’t just cook menus; you cook choreographed performances. When the lights dim in the dining room and the show begins, every move in your team must be perfect.

Your Role as Sous Chef

In this key position, you are the right hand of the culinary director. You support Steve Karlsch, our visionary head of haute cuisine, in all operational and strategic tasks. As Sous Chef, you independently manage services and menu sections. You’re the pacesetter at the pass, ensuring hundreds of plates leave the kitchen in perfect synchronization. You’re a mentor to junior colleagues and a sparring partner for the chefs de partie. Your responsibilities include:

Monitoring quality and hygiene (HACCP).

Training and leading the kitchen team.

Creatively developing new dishes for our „World Tour of Flavors.“ Imagine creating dishes with us like Lobster Thermidor on vanilla risotto or Wagyu tartare under the smoke dome. Your ideas are essential here, because we’re not looking for administrators, but rather creators.

The Culinary Concept

Why is the job of Sous Chef with us so special? Because our cuisine knows no bounds. We serve on handcrafted designer tableware – from golden shell-shaped tiered trays to octopus shells. Your challenge is to combine culinary excellence with these spectacular presentations. You’ll work with top-quality products and techniques like liquid nitrogen and dry ice fog to perfect the multisensory experience.

What you bring to the table

We’re looking for a Sous Chef who loves and lives their craft. You have completed culinary training and have several years of experience in fine dining. Leadership experience is essential, as you’ll need to be able to motivate and structure a team, even under pressure. You’re highly resilient and have excellent organizational skills. Since our team is international, you communicate fluently in both German and English.
