Your workplace as a Commis de Cusine isn’t a windowless basement room. The Blue Pearl is located in the historic „Swallow’s Nest“ in the Nikolaiviertel district, right on the Spree River. The location is breathtaking: over 900 square meters of luxury, golden ceiling waves, and illuminated coral floors. Even though your focus is on the pass and the chopping board, you’ll feel the energy of the place. You’ll work where others marvel. Our kitchen is state-of-the-art, equipped with everything a modern chef could desire. Here, you have the tools to excel as a Commis de Cuisine.

Your Responsibilities: Precision Meets Showmanship

As a Commis de Cuisine, you are the backbone of your position. You support the Chef de Parties with daily mise en place and evening service. But at The Blue Pearl, „preparation“ is more than just chopping vegetables. You’ll be working with the world’s most luxurious ingredients. Preparing the garnish for caviar served in a Fabergé egg. Helping to arrange oysters on illuminated agate platters, which are then brought to the table with a mist of dry ice. You’ll learn how to work with liquid nitrogen and smoking techniques. You’ll ensure that the foundation for our „world tour of flavors“ is perfect. Hygiene, cleanliness, and organization are your daily mantra, because at this level, we don’t tolerate compromises.

Many large kitchens have a harsh atmosphere. We take a different approach. Our philosophy is „inspiration instead of hierarchy.“ The founders, Steve, Torsten, and Tino Karlsch, are visionaries who know that a team can only deliver sensational results when the cohesion is right.
